Ingredients
Method
- Pressure cook the dal and beans with 4 cups water for 8 to 10 whistles, or simmer for about 2 hours, until completely soft.
- Melt 2 tbsp butter, fry the cumin, then the onion until golden. Add ginger-garlic paste, then tomato puree and chilli, and cook until thick.
- Add the cooked dal with its liquid and the salt. Mash a little.
- Simmer on the lowest heat for 45 minutes to 1 hour, stirring often and adding water as needed. The long simmer makes it creamy.
- Stir in garam masala, the rest of the butter, cream and kasuri methi. Serve with naan or jeera rice.

Used for the rich red colour of tandoori dishes, rogan josh, butter chicken and many restaurant-style curries without making them very hot.
No kashmiri chilli? Sweet or smoked paprika is the easiest swap for colour. Byadgi chilli, from Karnataka, is similar.
Crushed between the palms and sprinkled on butter chicken, paneer makhani, dal makhani and naan dough at the end of cooking.
No dried fenugreek leaves? Dried celery leaves give a similar note. Fresh methi leaves can be used in larger amounts.
