Ingredients

Method

  1. If using regular yogurt, hang it in a muslin cloth in the fridge for 6 to 8 hours to make thick hung curd. Greek yogurt can be used straight away.
  2. Whisk the hung curd until smooth, then mix in the sugar, saffron milk and cardamom.
  3. Chill for at least 1 hour. Garnish with pistachios and serve with puri.

The spices that matter

Green cardamom Elaichi

Crushed into chai, simmered in kheer and halwa, fried whole in biryani and pulao, and ground into garam masala.

No green cardamom? There is no close substitute. A small mix of cinnamon and nutmeg works in baking.

Saffron Kesar

Soaked in warm milk and added to biryani, kheer, shrikhand, kulfi and festive sweets.

No saffron? There is no real substitute. For colour only, a pinch of turmeric.

Nice to have

Salt, oil or ghee, onions, ginger, garlic and fresh herbs are assumed. See how to make a tadka for the order to add whole spices.
