Ingredients

Method

  1. Heat the oil until it just smokes (if using mustard oil), then let it cool for a minute.
  2. Add asafoetida and the whole spices, then the lamb. Sear on high for 8 to 10 minutes until browned.
  3. Mix the chilli powder with 3 tbsp water and add it; cook for 2 minutes. This gives the deep red colour without heat.
  4. Lower the heat and add the yogurt a little at a time, stirring constantly so it does not curdle.
  5. Add the fennel, dry ginger, salt and hot water. Cover and simmer for 1 hour or more, until the meat is tender. Add water if needed.
  6. Sprinkle with garam masala and serve with steamed rice.

Traditional Kashmiri Pandit rogan josh uses no onion, garlic or tomato.

The spices that matter

Kashmiri chilli Kashmiri mirch

Used for the rich red colour of tandoori dishes, rogan josh, butter chicken and many restaurant-style curries without making them very hot.

No kashmiri chilli? Sweet or smoked paprika is the easiest swap for colour. Byadgi chilli, from Karnataka, is similar.

Fennel seed Saunf

Chewed after meals as a mouth freshener, ground into Kashmiri and Bengali dishes, and fried whole in pickles and panch phoron.

No fennel seed? Anise seed is the closest swap; use a little less.

Dry ginger Saunth

Used in Kashmiri cooking, chai masala, sweets like panjiri and saunth chutney.

No dry ginger? Fresh ginger (about four times as much).

Black cardamom Badi elaichi

Used whole in meat curries, rajma, chole, biryani and garam masala for a smoky depth.

No black cardamom? A little smoked paprika plus a green cardamom pod gives a similar effect.

Cloves Laung

Fried whole with other spices for pulao, biryani and meat dishes, and ground into garam masala.

No cloves? A pinch of allspice is the closest swap.

Nice to have

The blend to use

Kashmiri masala (ver style): Kashmiri Pandit cooking relies on fennel, dry ginger and Kashmiri chilli rather than onion and garlic.

Salt, oil or ghee, onions, ginger, garlic and fresh herbs are assumed. See how to make a tadka for the order to add whole spices.
